Waffles and Whipped Cream

(in all recipes C = cup, T = tablespoon, t = teaspoon)

Waffles

1 ¾ C flour
1 T sugar
1 T baking powder
½ t salt
2 eggs
1 ¾ C milk
½ C oil
1 t vanilla

Mix flour, sugar, baking powder and salt; make a well

In a seperate bowl whip the eggs, then add milk, oil and vanilla.  Next stir the egg mixture into the flour mixture; mix until most lumps are gone.

Whipped Cream

1 C heavy cream
2 T sugar
½ t vanilla

Don't overmix your whipped cream - you want it slightly stiff but still moist looking.
