Breakfast Potatoes

Okay, we know potatoes for breakfast seem as exciting as watching paint dry – but these are remarkably tasty and very easy to prepare.

(in all recipes C = cup, T = tablespoon, t = teaspoon)

Preheat oven to 450F


I (5 pounds) bag red or russet potatoes

4 cloves minced garlic

1 onion, roughly chopped

2 green bell peppers (capsicum), seeded and roughly chopped

1 red bell pepper, seeded and roughly chopped

½ C olive oil

½ stick butter, melted

1 t seasoned salt

½ t cayenne pepper

Salt and pepper to taste

Combine all ingredients in a large bowl and bake for 45 minutes, tossing once while baking.
