Apple French Toast

Amazing... wonderful... delicious... Those are the kind of accolades this recipe garners.  If you don't have apples (Granny Smith work best)  try peach or pineapple slices.  You can make this the night before and have the same great results.

Serves 12

Preheat oven to 350°F.

(in all recipes C = cup, T = tablespoon, t = teaspoon)

1 C packed brown sugar
½ C butter
2 T light corn syrup
2 large tart apples, peeled, cored and sliced
6 eggs
2 C milk
2 t vanilla
12 pieces of French toast bread (or 9 in slices day old French bread sliced ¾ " thick)

Combine brown sugar and butter in a saucepan; cook for 5 minutes or until thickened, stirring occasionally add corn syrup and note the in change in texture.  Cook a bit more, then pour into two 13"x9" pans. Arrange the apples on top.

Combine the eggs, milk and vanilla.  Soak the bread slices in the egg mixture for 1 minute.

Place the bread slices over the apples, our extra egg mixture over the top and bake for 30 minutes.

OR Cover and refrigerate for 8-10 hours

Remove from frig 30 minutes before baking. Preheat the oven to 350°F and bake, uncovered, for 35-40 minutes until set.
